After working in restaurants in his home town of Liverpool, Manchester and London, Mike Lee moved to Paris to improve his culinary skills.  Having achieved his goals in Europe he moved on to work in Iran, Malta and Qatar.  But it was in the United Arab Emirates that Mike perfected the art of international cuisine as Chef in charge of three of the best hotels in Dubai, with restaurants featuring the cuisine of four continents.

Having decided to return to Europe, Mike and his wife, Jean, found the hotel of their dreams in the beautiful thermal spa town of Barbotan and decided to create from it a centre of gastronomie and international tourism.
